Pinterest Challenge- One Bowl Brownies

It's been a while since I've done one of these! The last time I did the Pinterest Challenge was January, but the last time I baked something for it was Brownie in a Mug. I clearly love my brownies. Let me tell you, I have used this recipe from Life Tastes Good many times. I have a friend who has some kind of potluck every few months, and I brought these the first time. The only reason her dad knows my name is because I was the one who brought the brownies. I've brought them for other occasions, and they have always been a hit. And once, I made these when I was bored and my sister's boyfriend and I sat at the kitchen table and ate half the pan while watching YouTube videos. Just a couple notes before we dabble into this: I was worried about the thickness of the batter and the addition of kosher salt, but trust me, I would not be giving this to you if it was a sub-par recipe. And second, the timing always seems to be different whenever I do it, so make sure you really check with a toothpick.

Ingredients:

- 1.5 cups sugar
- 3/4 cup all purpose flour
- 3/4 cup cocoa
- 3 eggs
- 3/4 cups butter
- 3/4 cups kosher salt
- 1/2 cup semi- sweet chocolate chips

1. Pre heat oven to 325 F.
2. Line 13x9 inch pan with parchment paper. I suggest buttering the pan so the paper sticks. Otherwise, spreading the batter become unnecessarily difficult.

1. Add the sugar.
2. Add the flour.
3. Add the cocoa.
4. Add the eggs (note that I actually cracked an egg with one hand here).
5. Add the butter. The original recipe calls for melted butter, but I used non-melted because I was using a hand mixer.
6. Add the salt and mix everything together.
7. Mix in the chocolate chips by hand.
8. Spread the batter in the pan. The batter is thick, so spread it as best you can.

1. Place in oven for 30-40 minutes. Once an inserted toothpick comes out clean, let cool for 10 minutes before taking the brownies out using the parchment paper.
2. Let cool completely before cutting and enjoy!

I love this recipe. I've used it so many times before that I'm excited to finally share it with you. That's what the best part of the Pinterest Challenge is! Plus, it's one bowl, so it hardly takes any time at all!

Is fall not the best reading season? I’m so glad I’ve had a few opportunities to sit on the front porch, wrapped in a fuzzy blanket with a hot drink and my book. Right now, it’s raining outside and all I want to do is cozy up and get back to my book. I’ve read some great non-fiction in the past six weeks. I’m learning so much about how people relate to the world around them. That is so important to me. Check them out! The Reason I Jump: The Inner Voice of a Thirteen-Year-Old Boy with Autism – Naoki Higashida – 4 Stars         This is a very short book that I think everyone should read – particularly those who work with children. Although knowledge has come a long way, there is still so much more to be learned about autism. This book is a series of question that Naoki Higashida answers from his point of view. Interspersed is also a handful of short stories from Higashida’s point of view.         It’s an incredible book. It’s something that really allows readers to understand ho
