Pinterest Challenge- Blueberry Breakfast Quesadilla

It is exam time! This means I have a lot more time to myself, and that means I have been spending a lot more time procrastinating. New obsession? Pinterest. My good friend Marlee from Marlee and You has challenged me to a Pinterest challenge. Instead of simply doing three things a month, I will do one thing a week. It can vary from recipes like I have done this week, or decorations for my bedroom. This will replace my outfit posts since I will not have enough outfits a week to create a sufficient blog post.

Now, I found this recipe last night on Pinterest, but it is originally from Daydream Recipe. I loved it. I love blueberries. And I love food. I feel like everyone has a food board, but you can follow mine here. Anyway, this recipe was really simple to make. The original recipe calls for a cinnamon spread, but I didn’t have one so I made my own (my mom was proud).

Blueberry Quesadilla
Ingredients

For the Cream Cheese Spread:

·         2 tablespoons cream cheese
·         1 tsp cinnamon
·         ½ tsp hot chocolate mix

For the Quesadilla:

·         One large tortilla
·         Blueberries

Instructions

For the Cream Cheese Spread:

Whip the cream cheese until it is smooth.
















Add the cinnamon and the hot chocolate mix and whip until it is mixed.






















For the quesadilla:

Heat a non-stick pan on medium heat.

















Spread the cream cheese spread on half of the tortilla. 






















Place the blueberries evenly on top of the spread.





















Fold the tortilla in half, and place in the pan. 




















Cook until it is golden brown and flip.






















Place on a plate and eat up!









































Like I said before, this was amazing. It was a great breakfast. Let me know if you try it out!
